Our aged cheeses, put in apposite ovens, are exposed for some hours to wooden smoke. With this procedure, they gain a color that varies from golden to lighter to darker brown. Their dough on the inside turns into an off-white color, with an unmistakable aroma. Their characteristic savory taste can be appreciated at best if they are dressed with olive oil and black pepper, or grilled.
