Ingredients: 250 g Mascarpone or Abbasciano Ricottina Mascotte, 200 g speck, ½ melon, 1 Kg figs.
How to make it: Clean the melon, cut it into small cubes and put it in a colander to drain, squashing it a little bit. Once dry, mix the melon with the Mascarpone or the Ricottina Mascotte and put a tablespoon of the mix in every slice of bacon. Fold the slices and roll them to form little croissants. Put five croissants in each plate forming a flower and alternate on extremities the peeled figs. Serve cool.
