Ingredients: 1 big eggplant, 100 g of sliced cooked ham, 200 g of ricotta alla Pugliese Abbasciano, extra-virgin olive oil, salt, parsley.
How to make it: Cut the eggplant in wide slices and grill them. Put them on a plate, dress them with oil, salt and minced parsley. Lay a slice of cooked ham and a slice of Abbasciano Pugliese-style ricotta on top of the slices of eggplant. Roll them. Ready to serve.
