Mozzarella in carrozza

Ingredients:

Sandwich bread 8 slices, 1 glass of milk, flour, salt, pepper, one Mozzarella alla Pugliese Abbasciano, Salt, 2 eggs, Anchovies, Cooked ham, extra-virgin olive oil.

How to make it:

Cut the mozzarella alla Pugliese Abbasciano in rather thick slices and lay them on the bread. Cover them with other bread slices making a sandwich. At your choice, you can also put a broken up anchovy or some cooked ham. Press the sandwiches well and pass them first in the flour, then wet them with the egg, and add salt and pepper.

Once they are well soaked, drain them and fry them on both sides in boiling hot oil. Let them dry on blotting paper and serve hot.
