Produced with whole buffalo milk, it has a sheer, white, porcelain color and a smooth and shiny surface. Its production is governed by specific food regulations that prescribe the exclusive use of buffalo milk in its making. The D.O.P. (Denomination of Protected Origin) mark guarantees moreover the origins of the Mozzarella di bufala campana, which can only be produced in eight provinces in south-central Italy. This product has specific characteristics: the surface clearly becomes very loose from the texture underneath, upon being cut it lets loose an abundance of white milky liquid with a distinguishable smell.
